On March 4, 2009, AK got an email from a family friend, Barbara Kim. The first Indian street food truck in the country.

Curry Up Now is fast casual Indian street food with the speed of a quick service spot and the hospitality of a full service one.

Guests order at the counter, grab their own water, sit down, we bring the food, we bus and pre-bus the table, we check back, we clear and goodbye them.

Not a buffet. Not a mom and pop curry house with the Taj Mahal on the walls. Not just another taqueria with Indian flavors.

Acknowledge within 4 seconds, verbal greet within 6. Food in their hands within 10 minutes. A goodbye that makes them want to come back.

All our chicken, lamb, and goat are halal certified across all locations. We do not serve pork. Naan is fresh made, in house, every shift.

Accuracy, Speed, Hospitality, Experience. Skip the bottom of the pyramid and the top collapses.

Fast food speed. Fine dining hospitality. Chef-driven food. Street energy.

Anybody can sell food. We sell confidence, warmth, energy, recognition, the feeling of being taken care of.

No phones on the floor, ever. No alcohol or drugs on shift. Halal integrity. Allergen protocol. Honest time clocking.

Shift starts means on the floor, in uniform, on the clock, ready to go. Time-off requests 14 days in advance.

Clean as you go. Cleanliness is an all-shift responsibility, not a closing duty.
