S.T.A.R., HOW TO READ A SHIFT
Four questions running in the background every moment you are on the floor. S.E.E. is what your face does. S.T.A.R. is what your head does.
| S, See | What does this need right now? Empty drink, confused look, clean plate. You see it before they say it. |
| T, Think | What is the best response? One second. The move that serves the and protects the operation. |
| A, Act | Do it now. Move with purpose. Speed is hospitality here. |
| R, Reflect | Did that solve it completely? The loop closes only when the is satisfied. That is the we already owe them. |
THE SEE FACTOR, EYES ON THE ROOM
- See the table. Walk every table every 5 minutes with purpose, not to check in, to observe. Water level, empty plate, a looking around. This is the floor walk cadence you already run, with a reason attached.
- See the . Someone scanning the board is still deciding. Someone looking up from their phone is ready. Someone hesitating at the door is uncertain, walk toward them.
- See the floor. A dirty table is a failure before anyone sits down. Napkin on the floor, missing condiment, crooked chair. You see it, you fix it, nobody has to tell you.
- See the rush. Watch the door, count the line, tell the kitchen before the wave hits. Three deep, two burritos incoming saves four minutes on every rush.
