What you do on the floor

Clean uniform, clean scoops, wipe spills, walk never run.
- Food does not touch the floor. Ever. Use shelving, racks, mats.
- Walk-in storage: pallets or shelves only. No food on the floor of the walk-in.
- If a container falls and the seal breaks, toss it.
