THE FIRST-TIMER
First-timers are nervous. They cannot pronounce most of the menu, they have heard Indian food is spicy, and they are scared of looking dumb at the counter. Your job is to take that fear off the table in 4 seconds.
When they say, I have never had Indian food before, you say: When was the last time you did something for the first time? Today. Let's go. Smile, eye contact, real warmth. You're good. I got you. Then the comfort line: no stress at all, think of it like Indian comfort food, the heat is in your hands, the menu is built for first-timers, and I have the easy entries memorized. That sequence breaks tension, lowers intimidation, builds confidence, and makes them remember us. Use it. Mean it.
- Hand them a paper menu. Walk them through it. Do not dump the whole menu on them, simplify to the easy entry: a or a with butter chicken or , plus a side of garlic .
- Ask, are you allergic to anything? Get this answered before recommendations.
- Recommend a personal pick. Lead with a story (founder pick, AK eats this, this dish is on the SF 7x7 list).
- Confirm spice level honestly. Be cautious with desi hot for first-timers.
- Tell them the steps: order at counter, sit, water and drinks self-serve, food comes to you.
- Goal of every first-timer interaction: they leave saying that was way easier and way cooler than I expected.
