First-timers get a real walk-through. Make them feel taken care of.

• Hand them a to-go menu, point to the pictures.
• Ask: are you allergic to anything? Get this out before recommendations.
• Recommend the easy entry: a bowl or a burrito. Say, bowls and burritos are why we are famous.
• Or recommend the street food experience: pick a small Indian street food and a snack to share. Tell them, this is how we eat.
• Use a real personal pick. Say, my favorite is [your actual favorite]. AK orders the deconstructed samosa, desi hot. Rana orders aloo gobi kathi roll, no egg, desi hot.
• Confirm spice level. Mild, medium, spicy, desi hot. Be honest about desi hot, this is not your granny's food.
