WHY THIS MATTERS, THE MATH

Average ticket size (we call it APC, average price per check) is the single biggest lever a cashier controls. Every dollar added to the average ticket compounds. If you add one $4 item to half your orders during a 4-hour rush, you just added several hundred dollars to the day, and the left with a more complete meal. Tips run roughly 5 to 10 percent of total sales at most CUN locations. Bigger check, bigger tip. You give yourself a raise.
