Read the ticket. Confirm with the kitchen. Move fast and quiet.
Pulling food from the window is a craft. Do it wrong, food sits, plates lose temperature, the line backs up. Do it right and the kitchen and the floor stay in rhythm.
- Read the ticket on the rail before you grab the plate. Match the table number. Match the protein. Match the modifications.
- Confirm with the kitchen: Chef, this is the chicken for table 18, correct? Wait for the nod.
- Plate it cleanly, garnish per spec, wipe the rim of the if needed.
- Move fast and quiet. Do not slam plates. Do not crowd the pass.
- If a plate is not to spec (wrong protein, wrong garnish, wrong temperature), do not run it. Hand it back politely: Chef, sorry, can we re-fire this one, the protein looks off?
