Expo final check, seven-point

Seven-point check before any dish or bag leaves the window.

Before a single dish or bag leaves the window, the expediter walks the seven-point check. No skipping. No I-am-sure-it-is-right. The check is what stops a wrong order from becoming a complaint.

The seven-point expo check
  • Right entree on the right ticket.
  • Right protein. Chicken, paneer, lamb, vegan, confirmed.
  • Right modifiers. Spice level, no onions, extra rice, all reflected on the plate.
  • All sauces and chutneys present. dip for ravioli, maggi for fries, raita with biryani, sago papad on the .
  • All sides and add-ons present. , , drink, dessert, all accounted for.
  • Allergy flag handled. If the ticket is flagged, the kitchen confirmed verbally, the dish was prepped on a clean station.
  • name and table number visible on the bag or platter. The runner should not have to guess.
