Measurable speed targets

The numbers we hit every shift: 4-sec acknowledge, 75-sec ring-in, 10-min food, more.

Hospitality is felt. Speed is measured. Both matter. The targets below are what we hit on a clean shift. Trainers will time you against these during certification.

The numbers we hit, every shift
  • Acknowledge a within 4 seconds of door open.
  • Verbal greeting within 6 seconds at the counter.
  • Standard order rung in under 75 seconds, end to end.
  • and screen confirm on 100 percent of orders.
  • Modifier accuracy above 98 percent. One mistake per 50 tickets is the bar.
  • Food in hand within 10 minutes (12 minutes max, then quote honestly).
  • Two-bite on every dine-in within 90 seconds of food drop.
  • Bus a table within 60 seconds of leaving.
  • Walk every table every 5 to 7 minutes during service.
  • Recovery acknowledgment (saying I got you, on it, let me fix that) within 15 seconds of a complaint.
Targets are floors, not ceilings. Beat them where you can. Never sacrifice accuracy for speed; a wrong order takes longer to fix than a slow order takes to ring.
