Five-step allergen protocol

STOP, REPEAT, MARK, NOTIFY, VERIFY. No shortcuts.

When a mentions an allergy, the order does not move forward until you have completed every step below. No shortcuts. No I-think-it-should-be-okay. No silent assumptions. The protocol exists because the wrong answer puts a guest in the hospital.

The five-step allergen protocol
  1. 1STOP. Pause the order. Do not keep ringing while the is talking. Eyes on them, full attention.
  2. 2REPEAT. Repeat the allergy back out loud. So you have a tree nut allergy, you cannot have any or any cross contact, is that right?
  3. 3MARK. Mark the allergy in the POS on the ticket. Every modifier visible to the kitchen on the KDS.
  4. 4NOTIFY. Walk to the kitchen and verbally confirm with the cook on that station. Tell the . Tell the manager if it is severe (anaphylaxis, EpiPen, hospitalization risk).
  5. 5VERIFY. Before the food leaves , confirm the dish is right. Tell the at : I confirmed with the kitchen. I want you to know we cannot 100 percent guarantee no cross contact, but we did everything we can.
