Samosa Chaat

Pani Puri

Hollow puri, potato garbanzo mash, cumin-cilantro-tamarind water. The most popular street snack in India. Also known as gol gappa (north India), puchka (Bengal), and many other regional names.

Taste: Cold, sweet, spicy, sour, crispy in one bite. Eat the whole puri at once, nigiri style.

Sell: Quintessential Indian street food. Walk first-timers through the bite, this is the moment most guests fall in love.

Why kachori?

Around 10 percent of India is desert. The Thar Desert covers four Indian states bordering Pakistan. Nomadic tribes there had to make food that survived extreme heat for months on the road, so shelf-stable food was the answer. Kachori is one of those: a deep fried crispy shell stuffed with lentils, veggies, or meat. Ours is stuffed with lentils. Built to travel, now plated -style with yogurt and chutneys.

1947 Chole Bhature

Hot puffy bhatura, masala, chutney onions, achaar. The 1947 in the name is a nod to the year of Indian Partition and Independence, which shaped Punjabi cuisine as we know it today. A Delhi staple, hard to find done well in the US.

Taste: Bhatura is crispy outside, light and airy inside. Chana is tangy, spiced, hearty. Pickled onions and achaar cut the richness.

Burritos

The Tikka Masala Burrito put Curry Up Now on the map in 2009.

Burrito vs Bowl

The Tikka Masala story

The most ordered Indian dish in the world. Origin disputed. A restaurant in Glasgow (Shish Mahal) claims chef Ali Ahmed Aslam invented it in the 1970s when a said the chicken was too dry, and the chef improvised a sauce from a tin of tomato soup, cream and spices. We trace the dish back centuries earlier, to the Mughal Empire that once ruled most of South Asia and laid the foundation for the slow-cooked, dairy-rich, mughlai style this dish belongs to. Either way, our chicken is what put Curry Up Now on the map. SF 7x7 magazine put the CTM Burrito on the 100 things to eat before you die list. When in doubt, sell this.

Same iconic sauces as the burritos, no tortilla, naturally gluten free.

How sexy fries were born

A regular at our San Mateo store used to order a side of fries, a side of sauce, and some cheese. He would pour the cheese and the sauce over the fries, every visit. We watched him do it long enough to put it on the menu. That is how got named. Real story, real .

What is peri peri?

Peri peri (also piri piri) is the African bird's eye chili. The seasoning blend (chili, garlic, citrus, vinegar, herbs) traveled from East Africa through Portuguese colonial routes and became a global spice. We make our own peri peri seasoning in house. Hot, smoky, tangy, garlicky. We use it on the fries, the , the tandoori sandwich, and the .

Thali

The Indian platter. The way restaurants in India serve a complete meal. Not how India eats at home.

(TAH-lee) means platter. The premise is variety in one meal: a starch, a protein or two, a or for body, pickles or chutney for brightness. Every state, every household has its own version.
